I think it depends on which type of math career you take having a minor in CS would be a huge advantage regardless. You would have the opportunity to take software jobs (many math majors become software developers) and that market continues to be hot while the economy is still weak overall. Having programming knowledge is essential if you want to go into banking and do financial engineering as well. As far as classes, start with the core programming classes (Java, C++, etc) as well as a scripting language if possible (Python, Perl, Shell). Ruby is very popular now as well. If you think you may want to do hardcore programming, knowing computer science is essential so delve into courses such as operating systems, algorithms, compilers, etc. I don't think you can go wrong with picking up more CS courses!
